SpamAssassin
SpamAssassin is an Apache-affiliated project that uses a wide variety of local and network tests to identify spam signatures.
It can be used in conjunction with mail delivery agents (like fetchmail), controlled on a per-user basis, as well as with mail transfer agents (Sendmail, Postfix, qmail, ...) where it might be controlled on a site-wide basis.
